Is it possible to disable the pistols and gernades like the other weapons?

Yes if you edit the weapons in a ckr by modifying the values of nades and pistols !!!

look for ammo and clip size ... and replace the value by 0

Is there a mod out there that does this? It's for a snipe only server.
