Can anyone tell me if there is an imunity setting for respawn maps i.e. when you respawn you can't be shot for x amount of time?

No such thing but there is a MOD for it I believe, written by MPowell1944, have a look in the mods section here or on callofduty.org

MP's mod gives you a few seconds grace-time to haul ass, works a treat
