I was able to do it on a Windows 2003 server.
The TS on Win2k3 is greatly improved.
I ran into a bunch of installers that a have graphics requirments that screw remote installs.
Why would you do an install? Just upload the installation directory.

Buy the game for your server.
Install in your pc
zip up the Call of Duty directory
upload to your server
remove that copy from your pc

CoD is a Win32 App.. there are registry entries that need to be made as well as dlls placed in key locations .. not to mention DX9 junk that needs to be checked. I really dont believe that a simple file copy would work.
Has this worked for you in a Win32 environment or just Linux?

Yes this works. The AllAboutNothing.net server was installed this way. It is running Win2k server.
Works on a W2003 server also
